Ingredients:

  • 12 rice paper wrappers
  • 2 carrots, julienned
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • Water for soaking the rice paper

Instructions:

  1. Prepare all the vegetables and set them aside.
  2. In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, and minced garlic until smooth. Set the peanut butter sauce aside.
  3. Fully submerge one rice paper wrapper into a bowl of warm water and let it soften for about 10 seconds or until it becomes pliable.
  4. Place the softened wrapper onto a clean work surface.
  5. Place a small amount of each vegetable and a few slices of avocado onto the center of the wrapper.
  6. Sprinkle the chopped fresh cilantro over the vegetables.
  7. Fold the bottom of the wrapper up over the vegetables and tuck it in tightly.
  8. Roll the entire wrapper tightly, tucking in the sides as you roll.
  9. Repeat this process until all the vegetables and wrappers have been used up.
  10. Serve the fresh vegetable rolls with the peanut butter sauce on the side for dipping.
