Rougail Sausages Recipe

Ingredients:

  • 8 sausages
  • 2 onions, finely sliced
  • 4 cloves garlic, minced
  • 2 large tomatoes, finely diced
  • 2 tbsp ginger, minced
  • 2 tbsp green chili pepper, chopped
  • 1 tsp paprika
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 4 tbsp vegetable oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped

Instructions:

  1. Heat the oil in a large skillet over medium heat.
  2. Once the oil is hot, add the sausages and cook for 5-6 minutes, or until browned on all sides.
  3. Remove the sausages from the skillet and set aside.
  4. In the same skillet, add the sliced onions and cook for 3-4 minutes, or until softened.
  5. Add the minced garlic, ginger and green chili pepper and cook for 1-2 minutes, stirring frequently.
  6. Add the diced tomatoes, paprika, cumin powder and turmeric powder and stir well.
  7. Cook the mixture for 5-6 minutes, or until the tomatoes are softened and the mixture has thickened slightly.
  8. Return the sausages to the skillet and coat them with the tomato mixture.
  9. Simmer the mixture for another 5-8 minutes, or until the sausages are cooked through.
  10. Season with salt and pepper, to taste.
  11. Garnish with fresh cilantro and serve with rice or bread, if desired.
