Rum Baba Log Recipe

Ingredients:

  • 1 cup warm water
  • 1 1/2 tbsp active dry yeast
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 3 large eggs, room temperature
  • 1/2 cup unsalted butter, softened
  • 1/4 cup dark rum
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1/4 cup water

Instructions:

  1. In a large mixing bowl, combine the warm water and yeast. Let it sit for 5 minutes until frothy.
  2. Add flour, sugar, salt, eggs and butter to the mixing bowl. Mix on low speed for 5 minutes, then increase speed to medium and mix for an additional 5 minutes.
  3. Cover the bowl with a kitchen towel and let it rise for 1 hour in a warm place.
  4. Preheat the oven to 350°F. Grease a 9×13 inch baking pan and set aside.
  5. Spoon the dough into the pan and smooth the top with a spatula. Bake in the oven for 25-30 minutes.
  6. While the cake is baking, prepare the rum syrup by combining the rum, heavy cream, sugar, and water in a saucepan on medium heat. Cook for 10 minutes, then remove from the heat and let it cool.
  7. Once the cake is finished baking, remove it from the oven and let it cool for 5 minutes in the pan. Remove the cake from the pan and place it on a wire rack.
  8. Poke holes in the cake with a fork or skewer, then brush the rum syrup over the cake. Keep brushing until all the syrup is absorbed.
  9. Cut the log into slices and serve immediately.
