Rum Baba Log Recipe
Ingredients:
- 1 cup warm water
- 1 1/2 tbsp active dry yeast
- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 3 large eggs, room temperature
- 1/2 cup unsalted butter, softened
- 1/4 cup dark rum
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 1/4 cup water
Instructions:
- In a large mixing bowl, combine the warm water and yeast. Let it sit for 5 minutes until frothy.
- Add flour, sugar, salt, eggs and butter to the mixing bowl. Mix on low speed for 5 minutes, then increase speed to medium and mix for an additional 5 minutes.
- Cover the bowl with a kitchen towel and let it rise for 1 hour in a warm place.
- Preheat the oven to 350°F. Grease a 9×13 inch baking pan and set aside.
- Spoon the dough into the pan and smooth the top with a spatula. Bake in the oven for 25-30 minutes.
- While the cake is baking, prepare the rum syrup by combining the rum, heavy cream, sugar, and water in a saucepan on medium heat. Cook for 10 minutes, then remove from the heat and let it cool.
- Once the cake is finished baking, remove it from the oven and let it cool for 5 minutes in the pan. Remove the cake from the pan and place it on a wire rack.
- Poke holes in the cake with a fork or skewer, then brush the rum syrup over the cake. Keep brushing until all the syrup is absorbed.
- Cut the log into slices and serve immediately.
