Ingredients

  • 4 large eggs
  • 1 head of lettuce, chopped
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard

Instructions
