Salad with Fresh Broad Beans, Herbs and Feta

Ingredients

  • 400g fresh broad beans, shelled
  • 1/2 red onion, thinly sliced
  • 1/2 bunch of fresh parsley, finely chopped
  • 1/2 bunch of fresh mint, finely chopped
  • 100g feta cheese
  • 1/4 cup extra virgin olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to boil. Add the shelled broad beans and cook for 2-3 minutes. Drain and rinse with cold water to stop the cooking process.
  2. In a large mixing bowl, combine the broad beans, sliced red onion, chopped parsley and mint. Crumble the feta cheese over the top and gently toss the ingredients together.
  3. In a small mixing bowl, whisk together the extra virgin olive oil, lemon juice, salt and pepper. Pour the dressing over the salad and mix well.
  4. Let the salad marinate for at least 30 minutes before serving. This will allow the flavors to come together and the feta cheese to soften slightly.
  5. Give the salad a final toss before serving.
