Salad with Fresh Broad Beans, Herbs and Feta
Ingredients
- 400g fresh broad beans, shelled
- 1/2 red onion, thinly sliced
- 1/2 bunch of fresh parsley, finely chopped
- 1/2 bunch of fresh mint, finely chopped
- 100g feta cheese
- 1/4 cup extra virgin olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Bring a pot of salted water to boil. Add the shelled broad beans and cook for 2-3 minutes. Drain and rinse with cold water to stop the cooking process.
- In a large mixing bowl, combine the broad beans, sliced red onion, chopped parsley and mint. Crumble the feta cheese over the top and gently toss the ingredients together.
- In a small mixing bowl, whisk together the extra virgin olive oil, lemon juice, salt and pepper. Pour the dressing over the salad and mix well.
- Let the salad marinate for at least 30 minutes before serving. This will allow the flavors to come together and the feta cheese to soften slightly.
- Give the salad a final toss before serving.
