Salted Zeppole Recipe

Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter, cut into cubes
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions:

  1. In a medium saucepan, bring the water, butter, sugar, and salt to a boil over medium-high heat.
  2. Reduce the heat to low and add the flour all at once. Stir constantly until the mixture forms a ball and pulls away from the sides of the pan, about 1 to 2 minutes.
  3. Remove from heat and let cool for 5 minutes.
  4. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
  5. Stir in the Parmesan cheese and parsley, and season with salt and pepper to taste.
  6. Heat 2-3 inches of oil in a deep pot until it reaches 375°F.
  7. Using a small cookie scoop or spoon, drop tablespoon-sized balls of dough into the hot oil. Fry until golden brown, turning occasionally, about 3-4 minutes.
  8. Remove from the oil with a slotted spoon and drain on paper towels.
  9. Sprinkle with additional salt while still warm.
  10. Serve warm or at room temperature.
