Sardine Recipe: Gourmet Starter

Ingredients:

  • 1 can of sardines in olive oil (120g)
  • 1 small red onion, finely sliced
  • 2 garlic cloves, minced
  • 2 tbsp. capers, chopped
  • 2 tbsp. parsley, chopped
  • 1 lemon, zested and juiced
  • 1 tbsp. extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 200°C/400°F.
  2. In a bowl, mix together the onion, garlic, capers, parsley, lemon zest, lemon juice, extra-virgin olive oil, salt and pepper.
  3. Place the sardines on a baking sheet lined with parchment paper. Spoon the mixture over the sardines.
  4. Bake for 12-15 minutes or until the sardines are crispy and the topping is golden brown. Serve hot or at room temperature with some crusty bread.
