Ingredients

  • 2 tablespoons olive oil
  • 4 endives, halved lengthwise
  • 2 apples, peeled, cored, and sliced into thin wedges
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Sauté endives until slightly browned, about 5 minutes on each side.
  4. Add apples, honey, thyme, salt, and pepper. Cook for another 5 minutes, until apples are slightly softened.
  5. On a lightly floured surface, roll out the puff pastry into a large circle.
  6. Cut the pastry into 4 circles, using a bowl or large cookie cutter as a guide.
  7. Divide the endive and apple mixture evenly among 4 ramekins or oven-safe dishes.
  8. Place one circle of puff pastry on top of each ramekin, tucking in the edges around the filling.
