Scallops with citrus caramel

Recipe: Scallops with Citrus Caramel

Ingredients:

  • 1 pound sea scallops
  • 1/2 cup granulated sugar
  • 1/4 cup fresh orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon sea salt

Directions:

  1. Dry scallops completely with paper towels and season both sides with salt and pepper.
  2. Heat a large skillet over high heat and add a tablespoon of oil.
  3. Sear scallops in the hot skillet until golden brown and crispy, about 2-3 minutes per side. Remove from skillet and set aside.
  4. In a medium-sized saucepan, add sugar and cook over medium heat until it dissolves and turns into a dark amber color, about 10 minutes.
  5. Remove the saucepan from heat and carefully whisk in orange juice, lemon juice, and lime juice. Be careful as the caramel will bubble and steam vigorously.
  6. Return the saucepan to medium heat and cook the caramel, whisking occasionally, until it thickens and becomes glossy, about 5 minutes.
  7. Remove the pan from heat and stir in the butter and sea salt.
  8. Pour the citrus caramel over the scallops and serve immediately.

Verdict:

This dish is a perfect blend of sweet, tangy, and savory flavors. The caramel sauce adds a lovely depth of flavor to the seared scallops, making it a perfect choice for any special occasion or romantic dinner.

Serving suggestions:

This dish is best served hot with a side of steamed vegetables or rice. You can also drizzle some extra citrus caramel sauce over the veggies or rice for some added flavor. A chilled white wine or champagne would pair perfectly with this dish.
