Seafood Cavatelli
Ingredients:
- 1 pound of cavatelli pasta
- 1 pound of mixed seafood (shrimp, scallops, calamari, mussels)
- 1/4 cup of olive oil
- 1/4 cup of white wine
- 1 can of crushed tomatoes (28oz)
- 1 small onion, chopped
- 4 garlic cloves, chopped
- 1 teaspoon of red pepper flakes
- Salt and pepper, to taste
- Fresh parsley, chopped
Directions:
- Begin by cooking the cavatelli pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic and cook until onion is softened.
- Add the mixed seafood to the skillet and cook until they are almost done. (Do not overcook or they will become rubbery.)
- Remove seafood from the skillet and set aside.
- To the same skillet, add white wine and let it evaporate for a minute or two.
- Add the can of crushed tomatoes to the skillet and stir well.
- Add red pepper flakes, salt, and pepper. Cook for 5 to 10 minutes, stirring occasionally.
- Add the cooked seafood to the skillet and cook for an additional 2 minutes so everything comes together.
- Divide the cooked cavatelli pasta into bowls and portion the seafood and sauce on top of the pasta.
- Garnish with chopped fresh parsley.
