Seafood Cavatelli

Ingredients:

  • 1 pound of cavatelli pasta
  • 1 pound of mixed seafood (shrimp, scallops, calamari, mussels)
  • 1/4 cup of olive oil
  • 1/4 cup of white wine
  • 1 can of crushed tomatoes (28oz)
  • 1 small onion, chopped
  • 4 garlic cloves, chopped
  • 1 teaspoon of red pepper flakes
  • Salt and pepper, to taste
  • Fresh parsley, chopped

Directions:

  1. Begin by cooking the cavatelli pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic and cook until onion is softened.
  3. Add the mixed seafood to the skillet and cook until they are almost done. (Do not overcook or they will become rubbery.)
  4. Remove seafood from the skillet and set aside.
  5. To the same skillet, add white wine and let it evaporate for a minute or two.
  6. Add the can of crushed tomatoes to the skillet and stir well.
  7. Add red pepper flakes, salt, and pepper. Cook for 5 to 10 minutes, stirring occasionally.
  8. Add the cooked seafood to the skillet and cook for an additional 2 minutes so everything comes together.
  9. Divide the cooked cavatelli pasta into bowls and portion the seafood and sauce on top of the pasta.
  10. Garnish with chopped fresh parsley.
