Seafood empanadas


Seafood Empanadas Recipe

Ingredients:

  • 1 lb. cooked seafood (crabmeat, shrimp and/or scallops)
  • 1/2 cup red onion, chopped
  • 1/2 cup red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, chopped
  • 1/2 tsp. cumin
  • 1/2 tsp. paprika
  • 1/4 tsp. cayenne pepper
  • 1/2 cup tomato sauce
  • 1 Tbsp. lime juice
  • 1 package (2-count) refrigerated pie crusts
  • 1 egg white, beaten

Directions:

  1. Preheat oven to 400°F.
  2. In a large bowl, mix together seafood, red onion, red bell pepper, garlic, cilantro, cumin, paprika, cayenne pepper, tomato sauce and lime juice.
  3. Roll out the pie crusts and cut into 6-inch circles.
  4. Place about 3 tablespoons of the seafood mixture in the center of each circle.
  5. Brush the edges of the circle with the egg white, fold in half and crimp edges with a fork.
  6. Place empanadas on a baking sheet lined with parchment paper.
  7. Brush the tops with egg white.
  8. Bake for 15-20 minutes or until golden brown.
