Seafood Empanadas Recipe
Ingredients:
- 1 lb. cooked seafood (crabmeat, shrimp and/or scallops)
- 1/2 cup red onion, chopped
- 1/2 cup red bell pepper, chopped
- 2 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 1/2 tsp. cumin
- 1/2 tsp. paprika
- 1/4 tsp. cayenne pepper
- 1/2 cup tomato sauce
- 1 Tbsp. lime juice
- 1 package (2-count) refrigerated pie crusts
- 1 egg white, beaten
Directions:
- Preheat oven to 400°F.
- In a large bowl, mix together seafood, red onion, red bell pepper, garlic, cilantro, cumin, paprika, cayenne pepper, tomato sauce and lime juice.
- Roll out the pie crusts and cut into 6-inch circles.
- Place about 3 tablespoons of the seafood mixture in the center of each circle.
- Brush the edges of the circle with the egg white, fold in half and crimp edges with a fork.
- Place empanadas on a baking sheet lined with parchment paper.
- Brush the tops with egg white.
- Bake for 15-20 minutes or until golden brown.
