Ingredients:

  • 2 cups of fresh raspberries
  • 1/2 cup of white sugar
  • 4 egg yolks
  • 1/2 cup of heavy cream
  • 1/4 cup of water
  • Pinch of salt

Directions:

  1. In a saucepan, combine the raspberries and water. Cook over medium heat for 5-7 minutes, or until the raspberries have softened and broken down.
  2. Remove from heat and push the mixture through a fine-mesh sieve, making sure to catch the juice in a separate bowl.
  3. Discard the seeds and press as much raspberry juice as possible through the sieve with the back of a spoon. Let the juice cool.
  4. In a separate bowl, beat the egg yolks and sugar until pale yellow and fluffy.
  5. In another bowl, beat the heavy cream until soft peaks form.
  6. Fold the egg yolk mixture and whipped cream together.
  7. Add the cooled raspberry juice and a pinch of salt to the egg yolk and whipped cream mixture.
  8. Mix everything together until combined.
  9. Pour the mixture into a loaf pan, cover with plastic wrap, and put it in the freezer until it is set for at least 4 hours.
  10. Slice and serve with additional fresh raspberries on top.
