Semolina Cake with Fried Apricots and Pistachios

Ingredients:

  • 1 cup semolina flour
  • 1/2 cup sugar
  • 1/2 cup melted butter
  • 1 cup milk
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup chopped pistachios
  • 6 apricots, pitted and sliced
  • 2 tbsp vegetable oil

Instructions:

  1. Preheat oven to 350°F. Grease a 9-inch baking dish.
  2. In a bowl, mix together semolina flour, sugar, baking powder, and salt.
  3. Add melted butter, milk, and vanilla extract to the dry ingredients and stir well until no lumps remain.
  4. Pour the cake batter into the prepared baking dish and sprinkle chopped pistachios on top.
  5. Bake in preheated oven for 25-30 minutes, or until golden brown and a toothpick inserted into the center of the cake comes out clean.
  6. While the cake is cooling, heat vegetable oil in a pan over medium heat. Add sliced apricots and fry for 2-3 minutes or until golden brown.
