Semolina cake with flavored syrup

Semolina Cake With Flavored Syrup

Ingredients:

  • 1 cup semolina
  • 1 cup sugar
  • 1 cup yogurt
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp vanilla extract
  • For the syrup:
    • 1 cup sugar
    • 1 cup water
    • 1 tbsp lemon juice
    • 2-3 cardamom pods (optional)
    • 1/2 tsp rose water (optional)

Directions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan with vegetable oil or butter and dust with flour or semolina to prevent sticking.
  2. In a large mixing bowl, stir together the semolina, sugar, baking powder, and baking soda.
  3. Add the yogurt, vegetable oil, milk, and vanilla extract to the dry ingredients and stir until well combined. The mixture should be thick, but pourable.
  4. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  5. Bake the cake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the flavored syrup. In a saucepan, combine the sugar, water, lemon juice, and cardamom pods (if using).
  7. Heat the syrup over medium-high heat, stirring occasionally, until the sugar dissolves and the mixture comes to a boil.
  8. Reduce the heat and simmer the syrup for 5-10 minutes or until it thickens slightly and turns syrupy. Remove from heat and stir in the rose water (if using).
  9. Once the cake is finished baking, remove it from the oven and let it cool for 5-10 minutes in the cake pan.
  10. Use a skewer or fork to poke several holes all over the surface of the cake.
  11. Pour the warm syrup evenly over the cake, making sure to fill the holes so the cake absorbs the syrup.
  12. Let the cake cool completely in the cake pan before slicing and serving.

Verdict:

This semolina cake with flavored syrup is a delicious and unique dessert that is perfect for any occasion. The cake is moist and tender with a hint of tang from the yogurt, while the syrup adds a sweet and fragrant note that ties everything together. Serve this cake with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
