Semolina Cake With Flavored Syrup
Ingredients:
- 1 cup semolina
- 1 cup sugar
- 1 cup yogurt
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp vanilla extract
- For the syrup:
- 1 cup sugar
- 1 cup water
- 1 tbsp lemon juice
- 2-3 cardamom pods (optional)
- 1/2 tsp rose water (optional)
Directions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan with vegetable oil or butter and dust with flour or semolina to prevent sticking.
- In a large mixing bowl, stir together the semolina, sugar, baking powder, and baking soda.
- Add the yogurt, vegetable oil, milk, and vanilla extract to the dry ingredients and stir until well combined. The mixture should be thick, but pourable.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake the cake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the flavored syrup. In a saucepan, combine the sugar, water, lemon juice, and cardamom pods (if using).
- Heat the syrup over medium-high heat, stirring occasionally, until the sugar dissolves and the mixture comes to a boil.
- Reduce the heat and simmer the syrup for 5-10 minutes or until it thickens slightly and turns syrupy. Remove from heat and stir in the rose water (if using).
- Once the cake is finished baking, remove it from the oven and let it cool for 5-10 minutes in the cake pan.
- Use a skewer or fork to poke several holes all over the surface of the cake.
- Pour the warm syrup evenly over the cake, making sure to fill the holes so the cake absorbs the syrup.
- Let the cake cool completely in the cake pan before slicing and serving.
Verdict:
This semolina cake with flavored syrup is a delicious and unique dessert that is perfect for any occasion. The cake is moist and tender with a hint of tang from the yogurt, while the syrup adds a sweet and fragrant note that ties everything together. Serve this cake with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
