Serrano Ham Croquettes Recipe
Ingredients:
- 2 cups of milk
- 1 cup of all-purpose flour
- 1/4 cup of olive oil
- 1/2 pound of Serrano ham, finely diced
- 2 garlic cloves, minced
- Salt and black pepper to taste
- 2 large eggs, beaten
- 1 cup of breadcrumbs
- 1 quart of vegetable oil for frying
Instructions:
- In a saucepan, heat the milk until it is almost boiling. Remove from heat and set aside.
- In another saucepan, heat the olive oil over medium-high heat. Add the diced Serrano ham and minced garlic. Cook for 2-3 minutes until the ham is slightly crispy.
- Add the flour to the ham mixture and stir until well combined. Slowly add the heated milk while stirring constantly. Keep stirring until the mixture is thick and smooth, about 5 minutes. Season with salt and black pepper to taste.
- Remove the mixture from the heat and transfer to a large bowl. Cover with plastic wrap and let it cool to room temperature. Once cool, use your hands to shape the mixture into small croquette shapes.
- Dip each croquette into the beaten eggs and then coat with breadcrumbs.
- In a large pot, heat the vegetable oil over medium-high heat. Fry the croquettes in batches until they are golden brown, about 3-4 minutes. Remove from the oil with a slotted spoon and place them on a plate lined with paper towels to drain the excess oil.
