Serrano ham croquettes: easy recipe (4 steps)

Serrano Ham Croquettes Recipe

Ingredients:

  • 2 cups of milk
  • 1 cup of all-purpose flour
  • 1/4 cup of olive oil
  • 1/2 pound of Serrano ham, finely diced
  • 2 garlic cloves, minced
  • Salt and black pepper to taste
  • 2 large eggs, beaten
  • 1 cup of breadcrumbs
  • 1 quart of vegetable oil for frying

Instructions:

  1. In a saucepan, heat the milk until it is almost boiling. Remove from heat and set aside.
  2. In another saucepan, heat the olive oil over medium-high heat. Add the diced Serrano ham and minced garlic. Cook for 2-3 minutes until the ham is slightly crispy.
  3. Add the flour to the ham mixture and stir until well combined. Slowly add the heated milk while stirring constantly. Keep stirring until the mixture is thick and smooth, about 5 minutes. Season with salt and black pepper to taste.
  4. Remove the mixture from the heat and transfer to a large bowl. Cover with plastic wrap and let it cool to room temperature. Once cool, use your hands to shape the mixture into small croquette shapes.
  5. Dip each croquette into the beaten eggs and then coat with breadcrumbs.
  6. In a large pot, heat the vegetable oil over medium-high heat. Fry the croquettes in batches until they are golden brown, about 3-4 minutes. Remove from the oil with a slotted spoon and place them on a plate lined with paper towels to drain the excess oil.
