Sesame, Daikon and Spring Onion Soba

Ingredients:

  • 200g soba noodles
  • 1 daikon, peeled and sliced thinly
  • 2 spring onions, sliced thinly
  • 2 tbsp toasted sesame seeds
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar

Instructions:

  1. Cook soba noodles according to package instructions.
  2. Drain and rinse with cold water.
  3. In a small bowl, whisk together soy sauce, sesame oil and rice vinegar.
  4. In a large mixing bowl, mix together cooked soba noodles, daikon, and spring onions.
  5. Pour in dressing and mix well.
  6. Sprinkle toasted sesame seeds on top.
