Sesame falafels, honey-lemon spinach


Sesame Falafels Recipe

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon sesame seeds
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons all-purpose flour
  • 1/4 cup vegetable oil for frying

Instructions:

  1. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, sesame seeds, cumin, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  2. Transfer mixture to a large bowl and stir in flour until well combined.
  3. Form mixture into small balls, about 1 tablespoon each. Flatten slightly to make patties.
  4. In a large frying pan, heat vegetable oil over medium-high heat. Fry falafels in batches until golden brown, about 2-3 minutes per side.
  5. Remove falafels with a slotted spoon and transfer to a paper-towel lined plate to drain excess oil.

Serving Suggestions:

Serve hot with hummus, tzatziki, or tahini sauce. Falafels can also be served in a pita with chopped tomatoes, lettuce, and onions.

Honey-Lemon Spinach Recipe

Ingredients:

  • 6 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:
