Sheep’s Bush Pies Recipe

Ingredients

  • 500g diced mutton or lamb
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • Salt and pepper, to taste
  • 500g puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 200°C.
  2. In a large skillet, heat the olive oil over medium heat. Add the onions and sauté until translucent, around 4 to 5 minutes.
  3. Add the garlic and cook for another minute, stirring constantly.
  4. Add the diced mutton/lamb and cook until browned on all sides. Season with salt and pepper.
  5. Add the Worcestershire sauce, beef broth, and tomato paste to the skillet and simmer for around 25 minutes until the sauce has thickened.
  6. Roll out the puff pastry and cut out rounds to fit your pie tins. Place the pastry at the bottom of the tin and fill with the meat mixture, making sure to leave a little space at the top.
  7. Cut out another round of pastry and place on top of each pie, making sure to crimp the edges to seal them together. Cut a small hole into the top of each pie to let steam escape.
  8. Brush the top of each pie with egg wash and bake in the oven for around 30 minutes until golden brown.
  9. Remove from the oven and let cool for a few minutes before serving.
