Shellfish en Papillote with Orange Zest Recipe
Ingredients
- 1 lb. of mixed shellfish (clams, mussels, shrimp, scallops)
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1 shallot, chopped
- 1/4 cup of dry white wine
- 1 tablespoon of orange zest
- Salt and pepper, to taste
- Parchment paper
Instructions
- Preheat the oven to 400°F (204°C).
- In a skillet, heat the olive oil over medium-high heat. Add the garlic and shallot, sauté for 1 minute.
- Add the mixed shellfish, and sauté until they just begin to open.
- Add white wine, orange zest, salt, and pepper, and cook for 1-2 minute until they are coated with the sauce. Remove from heat and let cool.

- Fold the other half of the parchment paper over the shellfish, and seal by crimping along the edges of the paper tightly.
- Place the parcels on a baking sheet and bake for 10-12 minutes, until the parchment paper is puffed up and lightly browned.
- Transfer the parcels to individual plates. Open the parcels and garnish with fresh herbs.
