Ingredients

  • 1 lb. of mixed shellfish (clams, mussels, shrimp, scallops)
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 shallot, chopped
  • 1/4 cup of dry white wine
  • 1 tablespoon of orange zest
  • Salt and pepper, to taste
  • Parchment paper

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. In a skillet, heat the olive oil over medium-high heat. Add the garlic and shallot, sauté for 1 minute.
  3. Add the mixed shellfish, and sauté until they just begin to open.
  4. Add white wine, orange zest, salt, and pepper, and cook for 1-2 minute until they are coated with the sauce. Remove from heat and let cool.
  5. Cut 4 pieces of parchment paper into a heart shape. Fold the parchment in half. Then cut out a half-heart shape, then open so that it forms a full heart shape.

  7. Fold the other half of the parchment paper over the shellfish, and seal by crimping along the edges of the paper tightly.
  8. Place the parcels on a baking sheet and bake for 10-12 minutes, until the parchment paper is puffed up and lightly browned.
  9. Transfer the parcels to individual plates. Open the parcels and garnish with fresh herbs.
