Shortbread filled with Lemon and Chocolate

Ingredients:

  • 1 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup lemon curd
  • 1 cup chocolate chips

Instructions:

  1. Preheat the oven to 350°F (180°C) and line a 9-inch square baking dish with parchment paper.
  2. In a large mixing bowl, cream the butter and sugar until light and fluffy. Stir in the vanilla extract.
  3. Add the flour, one cup at a time, mixing until the dough is smooth and well combined.
