  • 225g unsalted butter, softened
  • 110g caster sugar
  • 225g plain flour
  • 110g rice flour

  5. Bake for 25-30 minutes, or until the shortbread is lightly golden in colour and firm to the touch.
  6. Remove the shortbread from the oven and allow it to cool in the tray for 5 minutes before cutting it into pieces and transferring it to a wire rack to cool completely.
