Shortbread Tart with Mirabelle Plums Recipe

Ingredients

  • 200g plain flour
  • 50g ground almonds
  • 70g caster sugar
  • 140g unsalted butter, cubed
  • 1 egg yolk
  • 450g Mirabelle plums, pitted
  • 50g granulated sugar

Instructions

  1. Preheat the oven to 180°C/gas mark 4.
  2. In a food processor, pulse together the flour, ground almonds, caster sugar and butter until the mixture resembles breadcrumbs.
  3. Add the egg yolk and pulse until the mixture comes together to form a dough.
  4. Roll out the dough on a lightly floured surface to form a circle 25cm in diameter.
  5. Press the dough into a 20cm tart tin with a removable base, trimming off any excess. Prick the base with a fork and chill in the fridge for 10 minutes.
  6. Bake the pastry case for 20 minutes, or until lightly golden. Remove from the oven and leave to cool.
  7. Arrange the Mirabelle plums in concentric circles on top of the cooled pastry case.
  8. Sprinkle the granulated sugar over the plums and bake in the oven for a further 30 minutes, or until the plums are soft and the edges of the pastry are golden brown.
  9. Remove from the oven and leave to cool before serving.
