Shortbread Tartlets with Pears

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup butter, softened
  • 2-3 ripe pears, peeled and thinly sliced
  • 1 tablespoon lemon juice
  • 1/4 cup honey
  • 1/4 teaspoon cinnamon
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine flour and sugar.
  3. Using a pastry cutter or fork, cut in butter until mixture resembles coarse crumbs.
  4. Press mixture into the bottom and up the sides of tartlet tins.
  5. Bake for 10 minutes or until lightly golden.
  6. Remove from oven and let cool completely.
  7. In a medium saucepan, combine pears, lemon juice, honey, and cinnamon over medium-high heat.
  8. Bring mixture to a boil, then reduce heat to low and simmer until pears are tender, about 10 minutes.
  9. Using a slotted spoon, remove pears from saucepan and transfer to a plate.
  10. Increase heat to high and cook the remaining liquid in the saucepan for another 5 minutes or until thickened.
  11. Whip heavy cream and vanilla extract together until stiff peaks form.
  12. Divide the pear mixture evenly among the cooled tartlet shells.
  13. Top each with a dollop of whipped cream.
  14. Drizzle the remaining pear sauce over the top of the tarts.
  15. Refrigerate for at least 1 hour until set.
