Shrimp Croquettes Recipe
Ingredients
- 1 pound cooked shrimp, peeled and deveined
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup bread crumbs, divided
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter
- 1 cup milk
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 large eggs, beaten
- 1 cup panko bread crumbs
- Vegetable oil for frying
Instructions
- Chop the shrimp into small pieces and season with salt and black pepper.
- In a large saucepan, melt butter over medium heat. Add all-purpose flour and stir for 1-2 minutes until it forms a paste.
- Slowly add milk, whisking constantly until the mixture thickens. Add the parsley and green onions and stir to combine.
- Remove from heat and stir in the chopped shrimp and 1/4 cup bread crumbs. Let the mixture cool for 10-15 minutes.
- Using your hands, shape the mixture into small croquettes about 2 inches long and 1 inch in diameter.
- Dip the croquettes in the beaten eggs, then roll in panko bread crumbs until coated evenly.
- In a large skillet, heat enough vegetable oil to cover the croquettes to 375°F.
- Fry the croquettes in batches for 2-3 minutes on each side or until golden brown.
- Transfer to a paper towel-lined plate to drain excess oil.
