Shrimp Croquettes Recipe

Ingredients

  • 1 pound cooked shrimp, peeled and deveined
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup bread crumbs, divided
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1 cup milk
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 2 large eggs, beaten
  • 1 cup panko bread crumbs
  • Vegetable oil for frying

Instructions

  1. Chop the shrimp into small pieces and season with salt and black pepper.
  2. In a large saucepan, melt butter over medium heat. Add all-purpose flour and stir for 1-2 minutes until it forms a paste.
  3. Slowly add milk, whisking constantly until the mixture thickens. Add the parsley and green onions and stir to combine.
  4. Remove from heat and stir in the chopped shrimp and 1/4 cup bread crumbs. Let the mixture cool for 10-15 minutes.
  5. Using your hands, shape the mixture into small croquettes about 2 inches long and 1 inch in diameter.
  6. Dip the croquettes in the beaten eggs, then roll in panko bread crumbs until coated evenly.
  7. In a large skillet, heat enough vegetable oil to cover the croquettes to 375°F.
  8. Fry the croquettes in batches for 2-3 minutes on each side or until golden brown.
  9. Transfer to a paper towel-lined plate to drain excess oil.
