Shrimp, Fennel and Thyme Rillettes Recipe

Ingredients

  • 1 pound cooked shrimp, peeled and deveined
  • 1 fennel bulb, finely chopped
  • 1 tablespoon fresh thyme leaves, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons unsalted butter
  • 1/4 cup dry white wine
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the fennel and garlic and sauté for 3-4 minutes until the fennel has softened.
  3. Add the shrimp, thyme, and white wine and cook for another 3-4 minutes until the shrimp are heated through and the wine has evaporated.
  4. Remove the skillet from the heat and let the mixture cool to room temperature.
  5. In a food processor, pulse the shrimp mixture until roughly chopped, but not puréed.
  6. Transfer the mixture to a mixing bowl and stir in the mayonnaise.
  7. Season with salt and black pepper to taste.
  8. Cover and refrigerate for at least an hour to allow the flavors to meld.
