Simple Paella Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads, crushed
  • 1 cup Arborio rice
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1 lb shrimp, peeled and deveined
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. In a large skillet over medium heat, sauté the onions and garlic in olive oil until translucent.
  2. Add the sliced bell pepper, smoked paprika, and crushed saffron threads. Cook for 5 minutes.
  3. Add the Arborio rice to the skillet. Stir to coat the rice with the oil and spices and cook for 1-2 minutes.
  4. Add the chicken broth and bring to a boil. Reduce heat to low and simmer, covered, for 15 minutes.
  5. Add the frozen peas and shrimp to the skillet. Cover and cook for an additional 5 minutes or until the shrimp are pink and cooked through.
  6. Garnish with chopped parsley and salt and pepper to taste.
