Skillet Potato Pie Recipe

Ingredients

  • 4 large potatoes, peeled and sliced
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 6 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • Salt and black pepper, to taste
  • 3 tbsp olive oil
  • 4 large eggs, beaten
  • ½ cup milk

Instructions

  1. Heat the olive oil in a large cast iron skillet over medium heat.
  2. Add the potatoes and cook until golden and tender. Remove with a slotted spoon and set aside.
  3. Add the onion, bell peppers, and garlic to the skillet. Saute until soft, about 5-7 minutes.
  4. Add the smoked paprika, thyme, salt, and black pepper. Stir well.
  5. Return the potatoes to the skillet and stir to combine with the vegetables.
  6. In a mixing bowl, whisk together the eggs and milk. Pour the mixture over the potato and vegetable mixture in the skillet.
  7. Cook on low heat for 10-15 minutes, until the eggs are set.
  8. Turn off heat and let it sit for five minutes.
  9. Slice and serve hot and enjoy your skillet potato pie.

Serving suggestion

Serve the skillet potato pie hot, garnished with a sprinkle of fresh parsley or chopped scallions. You can serve it as a main dish for breakfast, brunch, lunch or dinner. It’s also a great side dish for your grilled or roasted meats.
