Skillet Potato Pie Recipe
Ingredients
- 4 large potatoes, peeled and sliced
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 6 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp dried thyme
- Salt and black pepper, to taste
- 3 tbsp olive oil
- 4 large eggs, beaten
- ½ cup milk
Instructions
- Heat the olive oil in a large cast iron skillet over medium heat.
- Add the potatoes and cook until golden and tender. Remove with a slotted spoon and set aside.
- Add the onion, bell peppers, and garlic to the skillet. Saute until soft, about 5-7 minutes.
- Add the smoked paprika, thyme, salt, and black pepper. Stir well.
- Return the potatoes to the skillet and stir to combine with the vegetables.
- In a mixing bowl, whisk together the eggs and milk. Pour the mixture over the potato and vegetable mixture in the skillet.
- Cook on low heat for 10-15 minutes, until the eggs are set.
- Turn off heat and let it sit for five minutes.
- Slice and serve hot and enjoy your skillet potato pie.
Serving suggestion
Serve the skillet potato pie hot, garnished with a sprinkle of fresh parsley or chopped scallions. You can serve it as a main dish for breakfast, brunch, lunch or dinner. It’s also a great side dish for your grilled or roasted meats.
