Small Coffee Babas

Ingredients:

  • 1/2 cup water
  • 1/2 cup sugar
  • 2 teaspoons instant coffee granules
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1/4 cup rum
  • Whipped cream and chocolate shavings for serving

Instructions:

  1. Preheat the oven to 350°F.
  2. In a saucepan, combine the water, sugar, and instant coffee granules and bring to a boil. Boil for 1-2 minutes or until the sugar has dissolved. Remove from heat and set aside to cool.
  3. In a mixing bowl, sift the flour and baking powder together. Add the cooled coffee syrup, egg, vegetable oil, and vanilla extract. Mix until well combined.
  4. Spoon the mixture into greased mini baba molds, filling each mold about halfway. Bake for 20-25 minutes or until the babas are golden brown and a toothpick inserted into the center comes out clean.
  5. While the babas are still warm, use a skewer to poke several holes in the top of each one. Spoon the rum over the babas, allowing it to soak in completely. Allow the babas to cool completely before removing from the molds.
  6. Serve the small coffee babas with a dollop of whipped cream and chocolate shavings.
