Small Grapefruit Soufflés
Ingredients:
- 1/2 cup fresh grapefruit juice
- 1/2 tsp grapefruit zest
- 1/4 cup sugar
- 1 egg white
- 1 tsp cornstarch
- Pinch of salt
- Confectioner’s sugar for dusting
Instructions:
- Preheat oven to 375°F.
- Butter and sugar four ramekins.
- Heat grapefruit juice over medium heat until it reduces to 1/4 cup.
- In a small bowl, whisk together cornstarch and 1 tablespoon of cold water. Add mixture to the reduced grapefruit juice and whisk until thickened.
- Add grapefruit zest and stir, set aside to cool.
- In a medium bowl, whisk egg white and salt until soft peaks form.
- Gradually add sugar while whisking until stiff peaks form.
- Add 1/4 cup of egg white mixture to grapefruit mixture and fold in until combined.
- Gradually add grapefruit mixture to egg white mixture and gently fold in until completely incorporated.
- Divide mixture into prepared ramekins, up to 2/3 full.
- Bake for 15-18 minutes or until soufflés are risen and golden brown.
- Dust with confectioner’s sugar and serve immediately.
