Small Panettones Recipe

Ingredients:

  • 500g all-purpose flour
  • 150g granulated sugar
  • 6 egg yolks
  • 100g unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tbsp active dry yeast
  • 1/2 cup warm milk
  • 1/2 cup warm water
  • 1/2 cup raisins
  • 1/2 cup candied fruit mix
  • 1/4 cup almond slivers (optional)

Instructions:

  1. In a small bowl, mix together warm milk, warm water, and active dry yeast. Let it rest for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour, sugar, salt, and egg yolks.
  3. Add in the melted butter, vanilla extract, and yeast mixture. Knead until the dough comes together.
  4. Add in raisins, candied fruit mix, and almond slivers. Knead until they are evenly distributed.
  5. Place the dough in a greased bowl and cover with a damp towel. Let it rise in a warm place for 1-2 hours until it doubles in size.
  6. Punch down the risen dough and divide it into small balls. Place them in lined muffin tins and let them rise for another 30-45 minutes.
  7. Preheat the oven to 350°F. Bake the panettones for 20-25 minutes until they are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let them cool for 5-10 minutes before serving.
