Smores: Marshmallow Recipe
Ingredients:
- 1/2 cup cold water
- 3 packets unflavored gelatin
- 1 cup granulated sugar
- 1 cup corn syrup
- 1/4 tsp salt
- 1 tbsp vanilla extract
- 1/4 cup potato starch
- 1/4 cup powdered sugar
Directions:
- Pour 1/2 cup cold water into the bowl of a stand mixer. Sprinkle 3 packets of unflavored gelatin over the water and allow it to sit for 10 minutes.
- In a medium saucepan, combine 1 cup granulated sugar, 1 cup corn syrup, and 1/4 tsp salt. Place the saucepan over medium heat and stir until the sugar has dissolved. Once the sugar has dissolved, stop stirring and allow the mixture to come to a boil. Once it reaches a boil, allow it to cook undisturbed for 1 minute.
- After 1 minute, remove the saucepan from the heat and carefully pour the hot sugar mixture into the bowl with the gelatin mixture. Turn the mixer on low speed and slowly increase to high speed. Beat for 10-15 minutes until the mixture becomes thick and fluffy.
- In a small bowl, whisk together 1/4 cup potato starch and 1/4 cup powdered sugar. Cover the bottom of a 9×13-inch baking dish with a generous amount of the potato starch mixture. Pour the marshmallow mixture into the prepared baking dish and smooth it with a spatula. Sprinkle more of the potato starch mixture over the top and allow it to set for at least 4 hours or overnight.
- Once set, sprinkle more of the potato starch mixture over the top of the marshmallow and invert it onto a cutting board. Cut it into squares and serve.
