Ingredients

  • 1 1/2 cups of all-purpose flour

  • 1/2 teaspoon of salt
  • 4 eggs
  • 3/4 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1/4 cup of vegetable oil
  • 1/2 cup of unsweetened coconut flakes
  • 1/2 cup of orange marmalade
  • 1/2 cup of orange juice
  • 1/4 cup of powdered sugar

Instructions

  1. Preheat your oven to 350°F. Line a 10×15 inch baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
  3. In a large bowl, beat the eggs and granulated sugar together with an electric mixer until light and fluffy, about 3 minutes.
  4. Add the vanilla extract and vegetable oil to the egg mixture and beat until combined.

  13. Sift the powdered sugar over the top of the cake.
