Socca is a gluten-free and vegan pancake originated from Nice, France that is quick and easy to make. It’s made with chickpea flour, olive oil, water, salt, and pepper. This recipe yields 2-4 servings and takes approximately 20 minutes to make.
Ingredients:
- 1 cup chickpea flour
- 1 cup water
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat the oven to 450°F (230°C).
- In a bowl, whisk the chickpea flour, water, 2 tablespoons olive oil, salt, and pepper until smooth.
- Heat a 10-inch cast-iron skillet on medium heat and add 1 tablespoon of olive oil. Pour half of the batter into the skillet and swirl to cover the bottom evenly.
