Socca is a gluten-free and vegan pancake originated from Nice, France that is quick and easy to make. It’s made with chickpea flour, olive oil, water, salt, and pepper. This recipe yields 2-4 servings and takes approximately 20 minutes to make.

Ingredients:

  • 1 cup chickpea flour
  • 1 cup water
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 450°F (230°C).
  2. In a bowl, whisk the chickpea flour, water, 2 tablespoons olive oil, salt, and pepper until smooth.
  3. Heat a 10-inch cast-iron skillet on medium heat and add 1 tablespoon of olive oil. Pour half of the batter into the skillet and swirl to cover the bottom evenly.
  4. Bake in the oven for 10-12 minutes or until the edges are crispy and the top is golden brown.
  5. Repeat with the remaining batter. Slice into wedges and serve hot or warm.
