Ingredients

  • 4 eggs, separated
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1 cup milk

  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease 4 6-ounce ramekins with butter.
  2. In a saucepan over medium heat, melt butter, and stir in flour until combined. Slowly pour in milk, whisking constantly to prevent lumps. Stir in sugar and fir liqueur until incorporated. Raise heat to high and bring mixture to a boil. Reduce heat to low; simmer, stirring constantly, until mixture thickens, about 2 minutes. Remove from heat and let cool for about 5 minutes.
  3. In a large bowl, beat egg whites on medium speed until foamy. Add cream of tartar and salt and continue to beat until stiff peaks form.
  4. In a separate bowl, whisk egg yolks until pale yellow and thickened. Stir in the cooled mixture until well combined.
  5. Add 1/3 of the egg whites to the egg yolk mixture and gently fold in using a rubber spatula. Slowly fold in the remaining egg whites until just incorporated, taking care not to overmix.
  6. Scoop the mixture into the prepared ramekins, filling to about 3/4 full. Run a straight edge around the top to level the mixture.
  7. Bake for 25-30 minutes or until the soufflés have risen and are golden brown on top. Serve immediately.
