Ingredients:

  • 4 eggs, separated
  • 1/2 cup granulated sugar
  • 1/4 cup water

  • 1/4 cup Speculoos cookies, crushed

Instructions:

  1. In a large mixing bowl, beat egg whites until stiff peaks form. Set aside.

  7. Drizzle remaining Speculoos spread over the top of each glass and sprinkle with additional crushed Speculoos cookies.
  8. Place the parfaits in the refrigerator for at least 2 hours, or until chilled and set.
