Ingredients:

  • 250 grams mascarpone cheese
  • 100 milliliters heavy cream
  • 100 grams granulated sugar
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 100 milliliters strong coffee, cooled
  • 1 tablespoon amaretto liqueur (optional)
  • 24-28 speculoos biscuits

Instructions:

  1. In a large mixing bowl, beat the mascarpone cheese and heavy cream together until light and fluffy.
  2. Add in the sugar, egg yolks, and vanilla extract. Beat until well combined.
  3. Mix together the cooled coffee and amaretto liqueur (if using) in a shallow dish.
  4. Dip each speculoos biscuit into the coffee mixture, making sure it is well coated, then arrange the biscuits in a single layer in the bottom of a serving dish. You may need to break some biscuits to fit them in.
  5. Spoon half of the mascarpone mixture over the biscuits.
  6. Repeat the process, layering the rest of the dipped speculoos biscuits over the mascarpone mixture, followed by the remaining mascarpone mixture.
  7. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or overnight.
  8. Before serving, sprinkle the top of the tiramisu with cocoa powder or grated chocolate.
