Spinach Cake

Ingredients:

  • 3 cups fresh spinach, washed and chopped
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) cake pan with butter and dust lightly with flour.
  2. In a mixing bowl, combine the flour, baking powder, and salt. Set aside.
  3. In a food processor, puree the spinach until smooth. Set aside.
  4. In a separate mixing bowl, cream together the butter and sugar until light and fluffy, about 3-5 minutes.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract and pureed spinach into the butter mixture.
  7. Add the dry ingredients into the wet ingredients mixture alternately with milk, mixing after each addition, until a smooth batter forms.
  8. Pour the batter into the prepared cake pan and smooth out the surface with a spatula.
  9. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  10. Remove from the oven and allow to cool in the pan for 10 minutes before transferring onto a wire rack to cool completely.
