Ingredients:
- 2 tablespoons of butter
- 1 diced onion
- 2 cloves garlic, chopped
- 6 cups of baby spinach, washed and drained
- 4 cups of chicken broth
- 1 cup of heavy cream
- 1/2 cup crumbled Shropshire Blue cheese
- Salt and pepper to taste
Directions:
- Melt the butter in a large pot over medium heat.
- Add the diced onion and chopped garlic. Saute until the onion is soft.
- Add the baby spinach and cook until it wilts.
- Pour in the chicken broth and bring to a boil. Reduce the heat and let simmer for 10-15 minutes.
- Use an immersion blender to blend the soup until it is smooth. Alternatively, you can transfer the mixture to a blender and blend until smooth, then return it to the pot.
- Add the heavy cream and crumbled Shropshire Blue cheese. Stir until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Verdict:
This creamy and flavorful soup is quick to make and perfect for a cozy night in. The Shropshire Blue cheese adds a deliciously tangy and salty flavor that perfectly complements the earthy taste of the spinach. Serve with some crusty bread or a side salad for a complete meal.
