Healthy Split Pea Soup Recipe

Ingredients:

  1. 2 cups dried split peas
  2. 1 large onion, chopped
  3. 3 cloves garlic, minced
  4. 3 large carrots, peeled and chopped
  5. 3 celery stalks, chopped
  6. 6 cups vegetable broth
  7. 2 teaspoons dried thyme
  8. 1 teaspoon smoked paprika
  9. 1 bay leaf
  10. Salt and pepper to taste
  11. 2 tablespoons olive oil

Directions:

  1. Rinse the split peas and set them aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 5 minutes.
  3. Add the chopped carrots and celery to the pot and sauté for another 5 minutes. Add the dried split peas to the pot along with the vegetable broth, thyme, smoked paprika, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 45-50 minutes or until the split peas have broken down and the soup has thickened.
  4. Remove the bay leaf and use an immersion blender to blend the soup until it reaches your desired consistency. Alternatively, you can use a blender, blend in small batches, and return the soup to the pot.
  5. Return the pot to the heat and let it simmer for another 10 minutes. Taste and adjust the seasoning if necessary. Serve hot with crusty bread and enjoy.
