Healthy Split Pea Soup Recipe
Ingredients:
- 2 cups dried split peas
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 large carrots, peeled and chopped
- 3 celery stalks, chopped
- 6 cups vegetable broth
- 2 teaspoons dried thyme
- 1 teaspoon smoked paprika
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Directions:
- Rinse the split peas and set them aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 5 minutes.
- Add the chopped carrots and celery to the pot and sauté for another 5 minutes. Add the dried split peas to the pot along with the vegetable broth, thyme, smoked paprika, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 45-50 minutes or until the split peas have broken down and the soup has thickened.
- Remove the bay leaf and use an immersion blender to blend the soup until it reaches your desired consistency. Alternatively, you can use a blender, blend in small batches, and return the soup to the pot.
- Return the pot to the heat and let it simmer for another 10 minutes. Taste and adjust the seasoning if necessary. Serve hot with crusty bread and enjoy.
