Spring Rolls Tutti Frutti Recipe
Ingredients
- 6 Spring roll wrappers
- 1/2 cup tutti frutti
- 1/2 cup carrots, julienned
- 1/2 cup cucumber, julienned
- 1/2 cup red bell pepper, julienned
- 1/4 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- 1/4 cup peanuts, roughly chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp honey
- 1 tbsp lime juice
- 1 garlic clove, minced
Instructions
- Mix Soy sauce, sesame oil, honey, lime juice and minced garlic in a small bowl to make the dip. Set aside.
- Soak spring roll wrappers in hot water for 10 seconds, and then lay them on a towel.
- Add a few basil and mint leaves to the center of the spring roll wrapper.
- Add tutti frutti, carrots, cucumber, red bell pepper and chopped peanuts over the herbs.
- Roll spring rolls tightly, but not too tight! Leave one end open.
- Serve the spring rolls with the dip on the side.
