Steamed Brioche Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon active dry yeast
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 egg + 1 egg yolk, lightly beaten

Instructions:

  1. In a large mixing bowl, whisk together flour, sugar, salt, and yeast.
  2. In a microwave-safe bowl, heat milk until it is lukewarm. Add melted butter to it and mix well.
  3. Add milk-butter mixture and beaten eggs to the dry ingredients. Mix until it comes together into a shaggy dough.

  5. Punch down the risen dough and knead it briefly. Roll it out into a cylinder shape and divide it into 6 equal portions. Form the portions into small brioche buns with round edges.
  6. Place the buns on a piece of parchment paper in a bamboo steamer or on a lightly oiled plate and let them rest for another 30 minutes.
  7. Bring the water in a steamer to a boil. Place the steamer basket over the boiling water and steam the brioche buns for 12-15 minutes or until puffed and cooked through.
  8. Remove the steamed buns from the steamer and let them cool on a wire rack.
