Strawberry Eton Mess Recipe
Ingredients
- 1lb strawberries, hulled and quartered
- 1 cup heavy cream
- 1/3 cup granulated sugar
- 3 large egg whites
- 1/4 tsp cream of tartar
- 1 tsp vanilla extract
- 4 oz meringue cookies, crumbled
Instructions
- In a large mixing bowl, beat together the heavy cream, sugar, and vanilla extract with an electric mixer until stiff peaks form. Set aside.
- In a separate mixing bowl, beat the egg whites and cream of tartar together with an electric mixer on high speed until stiff peaks form.
- Gently fold the whipped cream mixture into the egg white mixture until fully combined.
- Fold in the quartered strawberries and crumbled meringue cookies until just combined, being careful not to overmix.
- Spoon the strawberry Eton mess mixture into individual serving dishes and serve immediately, garnished with extra strawberries or whipped cream if desired.
