Strawberry Marble Cheesecake Recipe

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • pinch of salt
  • 3 (8 oz) packages cream cheese, softened
  • 1-1/2 cups granulated sugar
  • 4 large eggs
  • 1/3 cup sour cream
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, puréed and strained
  • pink food coloring (optional)

Instructions:

  1. Preheat oven to 325°F. Wrap the bottom of an 8-inch springform pan with aluminum foil. Set aside.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Mix until well combined and the mixture resembles coarse sand.
  3. Press the mixture into the bottom of the prepared springform pan. Bake for 10 minutes. Remove from the oven and let it cool while preparing the filling.
  4. Using an electric mixer, beat the cream cheese and sugar together until creamy and smooth. Scrap down the bowl as needed.
  5. Add eggs one at a time and mix well at low speed after each addition.
  6. Add sour cream, heavy cream, and vanilla extract. Mix until well combined.
  7. Incorporate the strawberry purée into half of the cheesecake filling. Add pink food coloring if needed to intensify the color.
  8. Spoon dollops of the strawberry batter into the cheesecake batter. Use a spoon or knife to swirl until you get the marbled effect you want.
  9. Pour the filling over the crust. Smooth out the top and tap the pan on the counter to release any air bubbles.
  10. Bake the cheesecake for 1 hour or until the cheesecake edges are set, but the center is still jiggly.
  11. Turn off the oven and leave the cheesecake in the oven for 30 more minutes, then crack the oven door open and leave the cheesecake to cool in the oven for 30 more minutes.
  12. Remove from the oven, run a knife around the edges of the cheesecake to loosen it from the pan, and let it cool completely on a wire rack.
  13. Cover and chill the cheesecake in the fridge for at least 6 hours, or overnight, before slicing and serving.
  14. Serving Suggestions:

    • Top with fresh strawberries
    • Serve with whipped cream and extra strawberry sauce.
