Strawberry Mini Cheesecakes
Ingredients:
- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup strawberry preserves
- 1/4 cup fresh strawberries, finely chopped
Instructions:
- Preheat oven to 350°F.
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well.
- Using a tablespoon, spoon mixture into 12 muffin cups. Press down with fingers to form the crust.
- Using an electric mixer, beat cream cheese and sugar in a large bowl until creamy.
- Add eggs, one at a time, beating well after each addition.

- In a small bowl, mix together strawberry preserves and chopped strawberries. Using a teaspoon, spoon mixture on top of cream cheese mixture.
- Bake for 20-25 minutes or until set.
- Remove from oven and let cool in muffin tray for 10 minutes.
- Remove from muffin tray and cool completely on a wire rack.
- Chill for at least 2 hours before serving.
