Strawberry Mini Cheesecakes

Ingredients:

  • 1 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry preserves
  • 1/4 cup fresh strawberries, finely chopped

Instructions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well.
  3. Using a tablespoon, spoon mixture into 12 muffin cups. Press down with fingers to form the crust.
  4. Using an electric mixer, beat cream cheese and sugar in a large bowl until creamy.
  5. Add eggs, one at a time, beating well after each addition.
  6. Add vanilla extract and mix well.
  7. Spoon cream cheese mixture into muffin cups, filling them about 2/3 of the way full.
  8. In a small bowl, mix together strawberry preserves and chopped strawberries. Using a teaspoon, spoon mixture on top of cream cheese mixture.
  9. Bake for 20-25 minutes or until set.
  10. Remove from oven and let cool in muffin tray for 10 minutes.
  11. Remove from muffin tray and cool completely on a wire rack.
  12. Chill for at least 2 hours before serving.
