Strawberry-Rhubarb Crumble Squares
A delicious and easy-to-make dessert that perfectly captures the flavors of summer.
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and diced
- 2 cups rhubarb, diced
- 2 cups strawberries, hulled and quartered
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
Instructions:
- Preheat the oven to 350°F.
- In a large mixing bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Add the diced cold butter and mix with a pastry cutter or your fingers until the mixture is crumbly.
- Press half of the crumble mixture into an 8-inch square baking pan, and set the other half aside.
- In a separate mixing bowl, gently toss together the diced rhubarb, strawberries, granulated sugar, cornstarch, and lemon juice.
- Spread the fruit mixture evenly over the crumbled crust.
- Sprinkle the remaining crumble mixture on top of the fruit.
- Bake for 40-45 minutes, or until the crumble is golden brown and the fruit is bubbly.
- Cool for at least 10 minutes before slicing and serving.
Serving Suggestions:
These strawberry-rhubarb crumble squares are best enjoyed warm with a scoop of vanilla ice cream on top. They also make a great addition to a brunch spread or as a sweet treat for a summer picnic.
