Strawberry-Rhubarb Crumble Squares

A delicious and easy-to-make dessert that perfectly captures the flavors of summer.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and diced
  • 2 cups rhubarb, diced
  • 2 cups strawberries, hulled and quartered
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions:

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Add the diced cold butter and mix with a pastry cutter or your fingers until the mixture is crumbly.
  3. Press half of the crumble mixture into an 8-inch square baking pan, and set the other half aside.
  4. In a separate mixing bowl, gently toss together the diced rhubarb, strawberries, granulated sugar, cornstarch, and lemon juice.
  5. Spread the fruit mixture evenly over the crumbled crust.
  6. Sprinkle the remaining crumble mixture on top of the fruit.
  7. Bake for 40-45 minutes, or until the crumble is golden brown and the fruit is bubbly.
  8. Cool for at least 10 minutes before slicing and serving.

Serving Suggestions:

These strawberry-rhubarb crumble squares are best enjoyed warm with a scoop of vanilla ice cream on top. They also make a great addition to a brunch spread or as a sweet treat for a summer picnic.
