Strawberry Shortcakes Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 3/4 cup heavy cream
  • 1/4 cup sour cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups sliced strawberries
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream, whipped

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter pieces to the flour mixture and cut in with a pastry blender or two knives until the mixture resembles coarse crumbs.
  4. In a separate mixing bowl, whisk together the heavy cream, sour cream, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir with a wooden spoon until a soft dough forms.

  8. Bake the shortcakes for 15-18 minutes, until they are golden brown on top.
  9. While the shortcakes are cooling, toss the sliced strawberries with the granulated sugar.
  10. To assemble the shortcakes, split each warm shortcake in half. Spoon some of the strawberries and their juices onto the bottom half of each shortcake, then top with a dollop of whipped cream. Place the top half of the shortcake back on top and serve immediately.
