Stuffed Squid in Verrine

Ingredients:

  • 4 medium-sized squid
  • 1/2 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4-6 verrine glasses for serving

Instructions:

  1. Preheat oven to 200°C.
  2. Clean the squid and remove the heads and tentacles. Be careful not to break the ink sacs.
  3. In a frying pan, heat 1 tablespoon of olive oil and sauté the onion and garlic for 2-3 minutes until soft.

  8. Remove from the oven and remove the toothpicks from the squid. Cut the squid into rings and place them in the verrine glasses.
  9. Drizzle with olive oil and serve hot.
