Stuffed Vegetables – Delicious Recipe
Ingredients
- 4 large bell peppers (red or green)
- 1 cup cooked rice
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 1/2 cup diced zucchini
- 2 cloves minced garlic
- 1 can diced tomatoes (14.5 oz)
- 1/2 cup vegetable broth
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Grated parmesan cheese (optional)
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the cooked rice, onion, celery, carrots, zucchini, and garlic.
- Add in the diced tomatoes, vegetable broth, dried basil, dried oregano, salt, and pepper. Mix well.
- Place the bell peppers upright in a baking dish.
- Stuff the vegetables with the rice mixture, packing it in tightly.
- Cover the dish with foil and bake for 45-50 minutes, or until the vegetables are tender.
- If desired, sprinkle grated parmesan cheese on top and bake for an additional 5-10 minutes until melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
