Stuffed Vegetables – Delicious Recipe

Ingredients

  • 4 large bell peppers (red or green)
  • 1 cup cooked rice
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1/2 cup diced zucchini
  • 2 cloves minced garlic
  • 1 can diced tomatoes (14.5 oz)
  • 1/2 cup vegetable broth
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the cooked rice, onion, celery, carrots, zucchini, and garlic.
  4. Add in the diced tomatoes, vegetable broth, dried basil, dried oregano, salt, and pepper. Mix well.
  5. Place the bell peppers upright in a baking dish.
  6. Stuff the vegetables with the rice mixture, packing it in tightly.
  7. Cover the dish with foil and bake for 45-50 minutes, or until the vegetables are tender.
  8. If desired, sprinkle grated parmesan cheese on top and bake for an additional 5-10 minutes until melted and bubbly.
  9. Remove from the oven and let cool for a few minutes before serving.
