Stuffed Zucchini Swirls

Ingredients:

  • 2 medium-sized zucchinis
  • 1 cup of ricotta cheese
  • 1/4 cup of grated parmesan cheese
  • 1/2 tsp of garlic powder
  • 1/2 tsp of dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F/190°C.
  2. Rinse the zucchinis and trim both ends. Cut them into thin slices (about 1/4 inch thick) lengthwise.
  3. In a mixing bowl, combine the ricotta cheese, grated parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well.
  4. On a baking sheet, place the zucchini slices and dab them dry with a paper towel.
  5. Take about 1 tbsp of the cheese mixture and spread it over each zucchini slice. Make sure to leave some space along the edges for easier rolling.
  6. Once all the zucchini slices are stuffed, roll them up tightly and secure them with toothpicks.
  7. Place the stuffed zucchini rolls in the oven and bake for 20 minutes, or until the cheese is melted and bubbly.
  8. Once done, remove from the oven and let them cool for a couple of minutes before serving.
