Stuffed Zucchini Swirls
Ingredients:
- 2 medium-sized zucchinis
- 1 cup of ricotta cheese
- 1/4 cup of grated parmesan cheese
- 1/2 tsp of garlic powder
- 1/2 tsp of dried oregano
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F/190°C.
- Rinse the zucchinis and trim both ends. Cut them into thin slices (about 1/4 inch thick) lengthwise.
- In a mixing bowl, combine the ricotta cheese, grated parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well.
- On a baking sheet, place the zucchini slices and dab them dry with a paper towel.
