Sun Vegetable Tian Recipe

Ingredients:

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium eggplant, sliced
  • 2 medium zucchinis, sliced
  • 2 medium potatoes, sliced
  • 2 medium tomatoes, sliced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

  8. Bake in the preheated oven until the cheese is melted and bubbly, about 25 minutes.
